To start our tasting of great Bordeaux wines, welcome to the Graves, one of the oldest French vineyards! The wine of the Graves appellation is the only wine in France that bears the name of its terroir - Las Gravas de Bordeus in Gascony. The particularity of this gravelly soil is that it is made up precisely of stones and gravel of various sizes (Graves...) and sand, on a subsoil generally composed of limestone and sometimes clay. These gravelly soils, by restoring to the vine, at night, the heat they have stored during the day , play the role of thermal regulator, a key role in the proper development of the vine.

We have chosen the Graves 2016 (one of the greatest vintages of recent years in the Bordeaux region) from Château Sirio, which owes its name to the estate's proximity to the Ciron River, a tributary of the Garonne - Sirio in Latin, Siron in Gascon. A castle recently taken over by Fabrice and Emer, which is already gaining lightning recognition in the Bordeaux region.

The vines are managed in a sustainable way: no chemical herbicides are used on the property, the soils are fed in a way that respects nature with organic manures based on vegetable composts, in order to allow this beautiful gravelly soil to express all its typicity and originality. Each plot is harvested separately when the grapes have reached optimal maturity. The result of these good practices can be found at the tasting.

A blend of Merlot (85%) and Cabernet Sauvignon (15%), with a beautiful garnet colour and light purple tints, this is a gourmet wine on the palate, with aromas of ripe fruit, yet keeping a nice freshness. A very successful Graves, to be enjoyed now (it is already a delight!) but which can also remain in the cellar for a few years with its perfectly integrated tannins that support the whole wine.

On red meats, game, poultry, cheeses or desserts with red fruits, you will make a very successful food and wine pairing.

We now travel a few kilometres to discover another of the rising figures of the AOC Graves on the same exceptional vintage (2016). Always excellent cultivation practices since Château Crabitey, taken over a few years ago by Arnaud de Butler, is conducted in sustainable agriculture and benefits from the High Environmental Value certification, level 3 (the highest level of certification, rare enough in Bordeaux to be reported!) and constant care at all stages of wine making.

Two nuances compared to our first Graves wine: the soil is made up of deep Graves Garonnaise on veins of grey clay and the blend of the wine has a higher percentage of Cabernet Sauvignon (50% Cabernet Sauvignon, 50% Merlot).

The colour of the 2016 vintage, with a deep black cherry colour, is adorned with beautiful ruby reflections. On the nose, it is fresh, with a beautiful range of red fruits, as well as a mellow and elegant woody note. The palate is powerful and round, supported by supple and subtle tannins. This wine offers us a beautiful length in the mouth with fruit notes and a fine oak note.

Already perfect to enjoy now, a cellaring will enhance the quality of the tannins and woody notes of this great Graves wine.

Château la Fleur Penin, Saint Emilion Grand Cru 2016, red wine (75cl, 14º)

Château La Fleur Penin is the fulfillment of an old dream of Patrick Carteyron (Château Penin), which he made come true in 2011 by buying this small property of 2.5 hectares of vines from 30 to 70 years old in the Saint-Emilion Grand Cru appellation that he leads in sustainable agriculture.

And on this other exceptional vintage 2016, the result is superb!

This blend of Merlot (85%) and Cabernet Franc (15%) gives us a dense wine, rich on the nose with hints of ripe fruit and spices, already in harmony on the palate with a beautiful persistence, everything we love about a great Saint-Emilion. A delicious Saint-Emilion Grand Cru from today but which can also be aged for a few years in the cellar.

Obviously on a beautiful piece of grilled beef this great Saint-Emilion is a real delight!
