Organic Grand White Burgundy, Saint-Véran “Les Climats” 2018 (75 cl)

We wanted to spoil our subscribers rotten this Christmas, and this magnificent organic white wine fits the bill: a grand Saint-Véran to kick off a perfect holiday tour of southern Burgundy. It’s hard to find premium Burgundian AOP labels at affordable prices these days. However, we fell in love with the organic vineyards of Domaine des Poncétys, and fortunately the feeling was mutual, allowing us to regale you with a truly fabulous wine for Yuletide cheer. A lovely, bright yellow colour with flecks of gold, an expressive bouquet with notes of ripe fruit (pear, apricot) and minerals, and a full, rich mouthfeel with gourmet hints of pear, peach and quince: this exceptionally fine Saint-Véran is sure to convince even the most discerning wine connoisseurs.

Crisp organic savoury biscuits with Burgundian Gruyère and Emmental cheese (90 g)

Annette is passionate about her little creations, and it’s easy to see why! Her 100% organic biscuits are made by hand in small batches, using seasonal ingredients obtained, whenever possible, from local producers who practice sustainable, environmentally responsible agriculture. Naturally, we chose a biscuit that does justice to her savoir-faire and the region’s famous cheeses: the crunchy texture of a home-baked biscuit and the sweet/savoury blend of Gruyère and Emmental made in the Franche-Comté. With a small glass of Saint-Véran white, there’s no better way to begin a round of appetizers!

Escargot is a must when it comes to Burgundian cuisine. And when we discovered a snail farm with a social conscience, where most of the employees have some type of disability, and the products are unbelievably scrumptious, we knew we’d hit the jackpot. Smooth and savoury, this original spread can be enjoyed on a slice of fresh bread or toast, or even with a salad. A gourmet bit of Burgundy to share with family or friends.

 
Traditional stone-ground whole-grain mustard with Burgundian white wine (250 g)

The Leblanc artisanal mill has earned a reputation for excellence, working with traditional methods since 1878, and today their oils and mustards can be found in many Michelin-star establishments in France and round the world. Jean-Charles hand-picks all the fruits and seeds, using rapeseed from his own region, walnuts from Périgord, Piedmont hazelnuts from Italy, and pistachios from Iran. After processing, roasting, or toasting, they are ground using a traditional grindstone. And the whole-grain mustard is no exception: you’ll never want to go back to supermarket brands!

 
The one and only Boeuf Bourguignon, beef stewed in a subtle red wine sauce with baby onions and other condiments (400 g)

The undisputed king of Burgundian cuisine is, of course, Boeuf Bourguignon. The combination of Burgundian red wine and premium Charolais beef is a legend whose fame has spread far beyond the borders of Burgundy. Christelle and her husband work together on the family farm, and she begins stewing the Charolais beef as soon as it’s ready, with no preservatives or additives. This marriage of local tradition and natural goodness has created a superb Boeuf Bourguignon. Heat slowly and serve with a side of steamed potatoes, rice or vegetables for a hearty holiday meal. Mâcon, corks and eau-de-vie? We’re definitely in the Franche-Comté! But what if we add some chocolate? Then we’ve got one of Nicole's delicious “Maconnais corks”! We came across this small chocolatery in the heart of Mâcon by accident, and although we aren’t usually big fans of liqueur-filled chocolates, we were blown away by Nicole’s sweets: the incredible harmony of chocolate and eau-de-vie is a beautiful gourmet success.

 
Delicious, aromatic, fruity, old-fashioned Burgundian blackcurrant coulis (25 cl)

Coulis is a must in Burgundy, especially when it’s this good! Five producers in the southern part of the region have banded together to grow berries, rhubarb, vine peaches and other fruits, and process them using time-honoured recipes. Of course, Burgundy’s famous blackcurrant is the star of this delicious coulis, which makes a perfect topping for dairy products or desserts... An explosion of fruity flavour!
