This month La Gourmet Box decided to explore the region of Nord-Pas-de-Calais and its gastronomy, which is amazingly rich yet largely unknown, even inside France. It is both a European crossroads with a strong Flemish culinary influence and a land of fertile fields and dairy farms that produce the famous Maroilles cheese, among other delicacies. We absolutely loved our flavour-packed tour of the département of Nord-Pas-de-Calais and its foodie delights: poultry, butter and cheese, Flemish dishes like waterzooi and potjevleesch, all sorts of biscuits, each more delicious than the last, fine beers (of course!) and redcurrant wine, endives, chicory, brown sugar... need we say more? This hamper contains a selection of our favourite gourmet finds from the north, which we’re sure will convince our gourmands that the cuisine of Nord-Pas-de-Calais is one of France’s best-kept secrets. Perlé de Groseille, sparkling redcurrant aperitif typical of the Côte d'Opale (75 cl - 11.5% vol.)

Perlé de Groseille, created by the Delobel family in 1985, is a variation on the traditional redcurrant wine recipe used in Nord-Pas-de-Calais for centuries. Redcurrants, which grow here in abundance, are fermented—without adding any colouring, aromas or wines—to produce this fine, naturally fruity, sparkling aperitif. And the result is superb: the fresh berry taste and tartness of the redcurrant makes it an excellent choice to go with starters or hors d’oeuvres.

Pair it with the rillettes or savoury biscuits in your gourmet hamper to fully enjoy its delicate flavour. It’s also wonderful with foie-gras. Serve chilled.

The name almost sounds Corsican, but nothing could be more typically northern than Chtiladici. Premium local ingredients like Moulins de Brimeux flour, Maroilles—a northern French cheese with a distinctively pungent aroma and unrivalled flavour—and creamy butter, careful kneading and baking at low temperature to preserve all the subtleties of the local wheat flour are just some of the things that make these biscuits so delicious. But, of course, the real secret is the skill and savoir-faire of a family of passionate bakers.

They go down a treat with a glass of Perlé.

 
Chicken liver confit spread with local chicory (100 g)

The combination of delectable liver—supplied by free-range chickens with the IGP Licques Label Rouge quality seal—and a hint of chicory root, which when roasted makes a coffee substitute that’s quite popular in the north of France, has produced this savoury spread with a nicely balanced flavour and very pleasant consistency.

Creamy duck rillettes with a splash of cherry Perlé (90 g)

These excellent duck rillettes, free of preservatives and other additives, boast a fine, well-rounded flavour, smooth creamy texture and a hint of cherries for an unusual yet tasty twist. Slice some bread and start spreading!

 
Waterzooi, a traditional Nord-Pas-de-Calais dish with chicken, cream and fried vegetables (400 g)

This typical northern dish originated in Belgium (waterzooi means “boiling water” in Flemish). Stewed in a delicious sauce made with cream and some secret species and served with fried vegetables, this is your chance to discover or rediscover one of the north’s most prized specialities.

Heat in a saucepan over low heat, stirring gently, and serve.
