In Bonneval, whose original name is "BONA VALIS", Emmanuel Dufer decided in 2017 on a somewhat crazy gamble, following an introduction to beer brewing: to develop his own craft microbrewery in the heart of the Haute Vallée du Loir, using among other things his own quality barley produced directly by him on his farm.

The result is a range of "LA BONN'VALLEE" craft beers, including this "3ème mi-temps": a light, citrusy lager to kick off your Eure-et-Loir gourmet box.

Rillettes from free-range hens, traditional recipe (180 g)

Pauline and Emeric still have the same idea, magnifying their free-range hens on their family farm into delicious rillettes, the perfect way to continue the traditional aperitif à la mode Eure-et-Loir.

 
Tasty stone-ground tarragon mustard (130 g)

Here's another farmer who's decided to diversify into the production of a crop that's been neglected in France recently: mustard! François processes the brown mustard grown on his farm himself. In particular, he uses a stone millstone to preserve all the mustard's aromas and differentiate it from industrial mustard.

Combined with a Sauvignon Val de Loire white wine and, in this case, tarragon, you've got a genuine artisanal mustard that's sure to be a delight with salmon steak or white meat, for example.

In harmony with bees, high quality honeys can be produced in Eure-et-Loir. 100% natural, with no parasitic taste, and using gentle extraction techniques in terms of temperature to preserve the intrinsic qualities of the honey, the Billard family (super endearing by the way) offers us exceptional honeys.

Here, a great gourmet classic from the house: their spring flower honey (80%) is blended with crushed and roasted French hazelnuts (20%) to give us an absolutely delicious spread. It's a pure delight on toast for breakfast or a snack, or in cooking for vinaigrettes or marinades.
