We've been dreaming up this gourmet chocolate box for some time now... It's fair to say that in the years we've spent exploring the gourmet region of France and Navarre to bring you our regional boxes, we've tasted some chocolate nuggets! In this chocolate box, you'll find a small selection of the best chocolate creations we've tasted: creamy, melt-in-your-mouth, crunchy or even infused, chocolate in all its forms by the best small-scale local artisans: chocolate lovers are sure not to be disappointed.

Le cacao t* , an infusion of cocoa bark and nibs (100 g)

At his "attelier", Laurent and his team work chocolate with passion, controlling the entire chain from cocoa bean sourcing to the creation of their chocolate nuggets. They select their beans exclusively from fair trade and organic producers, and from there carry out the entire chocolate-making process, from roasting to transforming the beans into delicious chocolates, which is extremely rare in the chocolate world.

To create this original and delicate infusion, Laurent combines cocoa nibs and grué (roasted cocoa bean chips) to enhance the aromas of this delicate infusion, which contains no theine or caffeine. The Aztecs and Incas already consumed roasted cocoa bean bark as an infusion. It is still consumed in Peru and Ecuador, often with the addition of honey.

Preparation tip: To prepare this unique chocolate infusion, which is ultimately prepared like a tea ("t*"), bring your water to 85°C, infuse for 3 minutes and you'll obtain a refined drink, with notes of cocoa and known anti-oxidant, anti-stress and anti-inflammatory benefits. You can also infuse your cocoa in vegetable milk.

A former chef-patissier and sommelier in Michelin-starred establishments, Xavier Michel's passion for the product has led him to create truly exceptional chocolate spreads in Burgundy, made using unique artisanal know-how, without palm oil, and even without any vegetable oils or preservatives.

To elaborate his gourmet chocolate spreads, Xavier uses IGP PIÉMONT hazelnuts (over 40%...), this magnificent hazelnut with a worldwide reputation, which will benefit from 2 transformations to sublimate it: a caramelization in a copper cauldron for an intense praline and the addition of a creamy Gianduja hazelnut with real melted milk chocolate to give the spread a unique natural creaminess. Enhanced by a hint of Fleur de Sel de Guérande IGP, it's a veritable chocolate nugget that we're giving you to discover...

Our chocolate box is full of surprises! Beneath the appearance of a classic sausage lies a delicious almond and hazelnut praline, with nougat, pistachio and almond chips, coated in milk chocolate.

Organic Exquisite Cookies (gluten-free), buckwheat flour and dark chocolate chips (100g)

In the heart of the Ardennes, we discovered this nugget of an artisan-grower who does everything (or almost everything!) himself and on site. The organic buckwheat grown on his farm is stone-ground on site, and forms the basis of this recipe for very fine, extremely addictive cookies.

The minimal sugar content brings out the finesse of the chocolate, all accompanied by a magnificent texture. And what's more, this delicious cookie is organic and gluten-free, for those whose allergy limits their sweet tooth.... What a delight!

Cabécou may be a goat's milk cheese from the Massif Central, but these little treats only look like it!

Maison Guinguet plays on this discrepancy by offering us these cabécous, which are in fact delicious bites that are both crunchy and melt-in-the-mouth, with hazelnut praline, crêpe dentelle and a white chocolate coating... Young and old alike are in for a treat with these chocolaty morsels!

Organic 88% dark chocolate bar from Togo, fair-trade Kekeli bean, coconut blossom sugar (75 g)

A gourmet chocolate box without an exceptional dark chocolate could hardly take on this name. And obviously we didn't want to put just any dark chocolate in the box. And we found THE rare nugget!

This chocolate is a pure marvel, because in addition to being organic and fair trade (rare in the world of chocolate!), the work carried out by this artisan is truly remarkable. You may not know it, but an artisan chocolatier who roasts, crushes and refines the cocoa bean himself to make his own chocolate is a (very) rarity..

Here, organic fair-trade cocoa beans from the Kekeli cooperative in the Kpalime region of Togo are used as the raw material. No palm oil, of course: the Kekeli beans are gently roasted by our craftsman at low temperature, who then prepares the cocoa mass, combining it with cane or coconut blossom sugar to refine the taste of this unique chocolate. This combination gives this 88% pure dark chocolate a finesse that will astonish you. With many chocolatiers, this concentration of cocoa often gives the chocolate a harsh mouthfeel, but not here. Tell us about it!

To finish off this gourmet chocolate box, we'd like to offer you one last little treat. Pierre and Julien couldn't find any Anjou cocoa beans, but they took care to prepare their homemade chocolate cream with cocoa from the benchmark for organic and fair-trade chocolate: Kaoka.

Prepared with local whole milk, it's once again very fine and very good, as well as offering a magnificent creaminess that only a good cream can offer. On your spoons!
