Arbois is a historic town in the Jura, known not only as the birthplace of Louis Pasteur but also for its heritage and, above all, for its vineyards, which are rooted in the clay-limestone marl slopes—a legacy of the Mesozoic seas—that create an exceptional wine-growing terroir.

Arbois wines, famous since Roman times, hold an AOC designation and are produced from grape varieties typical of the Jura, starting with the one we’d like to introduce to you: Poulsard, a must-try in the Jura.

It is a light, approachable, and convivial red wine with aromas characteristic of the Jura terroir. With a bright, fairly light ruby color and clean, fruity aromas of strawberry, raspberry, and bell pepper, it’s a delightful, balanced, elegant, and charming wine. And it’s very refreshing on hot days—a wine with a bright future!

It’s perfect with salads, cold cuts, grilled meats, pizzas, fresh cheeses, or fruit-based desserts—and it’s the ideal companion for your Jura gourmet basket!

Serving: Best served slightly chilled, between 12°C and 15°C.

2024 Épicures d’Or Award

Invented around 1550, the bricelet is a cookie originating in Switzerland, likely linked to the production of communion wafers. Its popularity quickly spread across the border, creating delicious memories for generations of food lovers in Savoie and Franche-Comté.

Just like raclette, crozets, blueberry tart, and Saint-Génix, the bricelet is now one of the iconic specialties of these mountain regions. Unique in their shape and patterns, these thin, crispy wafers are entirely handmade and then baked one by one in a “bricelet iron,” a hallmark of the artisan baker’s expertise.

Here, it’s Géraldine who has taken up the craft of making artisanal bricelets that incorporate a variety of both sweet and savory flavors—a guaranteed change of pace from chips and peanuts!

When I stopped by to pick up our order, a batch of bricelets made with local Comté cheese was just coming out of the oven, and I can tell you—they really made my mouth water!

Fresh butter, flour, a pinch of Guérande salt, and Comté AOP aged for at least 12 months, produced by the nearby Fromagerie du Revermont.

Full of flavor and crunch for happy hour: we love it!

 
Fine smoked pure pork rillettes typical of the Haut-Doubs region (140 g)

Our artisan, based in Poligny in the heart of the Jura, offers us some real gems that are not only typical of the region but also absolutely delicious. Starting with these smoked rillettes.

Unlike traditional rillettes (such as those from Le Mans), the Comtois version incorporates the distinctive flavor of the region’s traditional smoking process, a legacy of the expertise of the “tuyés” (the large local smokehouses).

Slow-cooked to achieve a melt-in-your-mouth, stringy texture, these rillettes—served on a slice of toasted bread—are sure to surprise more than a few people!

Le Moulin de Vaux is a small Jura-based company founded in 1999 by Frédéric Loigerot, a former duck farmer, in Poligny.

Drawing on his experience as a breeder, our artisan has developed this classic French recipe using duck drumettes, resulting in exceptionally tender meat. The creamy sauce, with its lovely citrus notes, adds a perfectly balanced sweet-and-salty touch.

Served with a little rice, for example, you’re in for a real treat!

In the world of artisanal flours, gaude flour holds a special place. This iconic product of the Bresse, Franche-Comté, and Jura regions embodies the authenticity of a well-preserved regional culinary heritage. With its characteristic roasted notes and distinctive golden color, this roasted corn flour has a very unique flavor profile: a pronounced roasted aroma, almost caramelized, that clearly sets it apart from traditional corn flour.

For these small shortbread cookies, our artisan uses it—but more importantly, he made it himself, using traditional methods in this timeless mill located in the heart of the Jura.

The Moulin du Pont des Vents is a watermill dating back to the Middle Ages. After falling into disuse in the 1970s, it was brought back into service to produce flour (when there’s water!) and bake its own bread and other pastries (using its own flour!). The mill’s mission is to produce high-quality, natural, “homemade” products, free of any additives or processing aids. The wheat is sourced from a certified organic farmer (who uses no pesticides or chemical fertilizers). The germ and inner layers of the wheat kernel are retained in the flour, providing vitamins, minerals, and the fiber essential for a healthy diet.

All in all, this wonderful venture offers nothing but benefits, and you can really taste it: these little crispy shortbread cookies made with gaude flour are sure to delight anyone with a sweet tooth!

 
Artisanal Mirabelle plum jam, delicately flavored with Macvin du Jura (125 g)

Véronique and Laurent create their jams with the help of a few local grandmothers who advise them and have shared some of their secrets from traditional recipes of yesteryear.

Their jams are cooked the old-fashioned way—gently and in small batches—in red copper pots and are, of course, free of artificial colors and preservatives. Here we offer one of their delicious Jura creations: a truly local pairing of the classic mirabelle plum and Macvin.

A Jura macvin is a fortified wine made by blending grape must with Jura marc brandy. It’s added while the mirabelle plums are cooking, resulting in a jam that’s incredibly addictive.

Based in a wild and unspoiled area at the gateway to the Haut Jura, Stéphanie Torrens (aka Lulu) grows and harvests, alongside her partner, wild berries and aromatic and medicinal plants—both from the natural surroundings and their own organically farmed fields—to create their sweet blends of fragrant and soothing herbal teas, which they dry themselves.

We’re big fans of their herbal teas, but also of their total dedication to organic farming: AB-certified, she doesn’t hesitate to go even further in her commitment to respecting nature and the plant world.

So there’s really no harm in treating yourself to a “P’tit bonheur de Lulu”…
