In the heart of the Cognac terroir, Domaine Elisabeth is a very old property of the Arrivé family, who have been perpetuating the winegrowing tradition since 1767. The 50 hectares of vines are planted with Chardonnay, Sauvignon, Ugni blanc and Colombard, as well as Merlot and Cabernet sauvignon, and have been certified organic since...1997!

We were seduced by their Cuvée Réserve. With aromas of acacia and exotic fruits, this 100% Chardonnay is an excellent match for seafood terrines and fish soup in your Charentais gourmet basket, or for white cheeses, for example.

Drink not too chilled, ideally at 12º, to discover all the subtleties of this excellent local wine.

We couldn't miss their terrine charentaise, a generous terrine which, combined with the aromatic power of the inevitable cognac, is sure to be a delightful start to your Charentais aperitif!

Simply spread on a slice of lightly toasted farmhouse bread and you're ready to go.

 
Creamy salmon flakes with ginger and lemon (90 g)

We continue our Charentais aperitif with a delicious ceviche-style lemon-marinated salmon crumble, festive and gourmet with a hint of ginger.

All prepared with the utmost rigor in the choice of ingredients, without the use of colorants or preservatives: you'll be telling us all about it!

 
Tasty fish soup with langoustines (400 g)

The recipe for a good fish soup is based on a few simple, common-sense principles: quality fish, a harmonious blend of spices and know-how. And our artisan has that in spades!

First, he prepares a vegetable stock with carrots, leeks, potatoes, onion, white wine and Charente butter, all hot-brewed with flour. He then adds a secret blend of spices, followed by the fish, purchased almost exclusively from the Cotinière fish auction on the island of Oléron. After stirring and grinding, and several cookings, our craftsman obtains this delicious fish soup made according to the rules of the Art... You'll just have to check it out for yourself!

Heat over low heat without boiling, add garlic croutons and grated cheese and serve piping hot, accompanied by a dry white wine from your Charentais gourmet basket, and you're ready to go.

A good Charentais fish soup is nothing without its little croutons! Tipiak has always perpetuated its bread-making expertise. Using French wheat flour, our craftsmen knead, shape and oven-bake fine baguettes, which are then sliced into delicious croutons, delicately rubbed with garlic to spice things up.

When it's time to enjoy your soup, add a few croutons to the surface and enjoy!

 
Pig fondant with cognac and rice pilaf (380g)

Janine et Jean is a local, artisanal cannery promoting the Charente region and its gastronomy. It's above all the story of a couple passionate about local gastronomy and sharing good times. Their preserves are handcrafted from the finest local produce, with no preservatives, colorants or additives of course.

We fell in love with their fondant de cochon, spiced up with a touch of cognac: a little delight! Just reheat the jar for 3-4 minutes in the microwave after removing the lid, or in a saucepan over low heat.

 
Galette charentaise with salted butter caramel and fleur de sel (270g)

Produced in the purest respect for Charentais tradition, this large galette, typical of the region, seduces with its incomparable softness and melt-in-the-mouth goodness!

What fond memories of our childhood...! Our artisan reminds our taste buds of delicious moments with these delightful little caramels made with Charentes-Poitou PDO butter, and salted with Fleur de Sel de l'Île de Ré, of course. A little gourmet nugget!

Tip: For optimum enjoyment, let them melt in your mouth for a few moments before biting into them, to awaken all their flavors..
