A gourmet Christmas basket filled with products from small, authentic Burgundy producers in the Côte d'Or department, taking you on a voyage of discovery of an extremely rich, varied and high-quality culinary production. For Christmas, we had to take you to a great terroir!
Winemaker: Domaine Familial Thevenot - Le Brun & Fils.
The Thevenot family's vineyards are located in the heart of the Hautes Côtes de Nuits at Marey-les-Fussey on the heights of Nuits Saint Georges, some 10 km north of Beaune, and spread over three appellations of origin: Hautes Côtes de Nuits, Hautes Côtes de Beaune and Bourgogne Aligoté.
We've chosen to introduce you to their Aligoté, the traditional white grape variety of Burgundy, which originated in the 17th century and is the result of a cross between Gouais Blanc and Pinot Noir, the emblematic variety of red wines in Burgundy.
Domaine Thévenot Lebrun produces this Bourgogne Aligoté with freshness and finesse. After harvesting the grapes at full maturity, the wine is aged on lees with a minimum of handling during the winter, to preserve its natural perlance (very slightly effervescent) . The wine has a bright, light gold color, a nose of white flowers and a hint of peach, a fresh attack on the palate and a slightly vanilla finish. This wine can also be accompanied by a typically Burgundian crème de cassis, in homage to Canon Kir, inventor of the nectar of the same name. Finally, this delicious Bourgogne aligoté stands on its own..
Les Diableries, Diane Houdaille.
With the 100% Côte d'Or label, Diane makes these delicious vegetarian creations with local vegetables.
We chose this gourmet dip, which combines the sweetness of local sweet potatoes with a silky, velvety texture. Enhanced with a hint of Fallot grainy mustard and a subtle combination of spices, including the famous Spanish pimentón, it reveals subtle smoky notes.
Ideal to start the Christmas aperitif, on toast, with chips or breadsticks.
La Ferme de Sous la Velle, Family Farm, Rosine and Sylvain Mallet.
Located in the heart of the Auxois region, on the edge of the Morvan Regional Nature Park in the village of Beurey-Beauguay, Rosine and Sylvain raise their animals and cultivate their land according to the traditional principle of mixed farming, where their cows graze in the meadows in summer, taking advantage of the rich, fatty grass of the Auxois bocages, and are fed in winter with the fruits of their harvests (wheat, barley, oats, peas, alfalfa, hay, etc.).).
For the Christmas season, here's a typically Burgundian dish made magnificently by our artisan with the meat of his Charolais cows... Well, Burgundian... Although Burgundy gets all the credit, history has it that the Dukes of Burgundy brought this recipe back from the region of Flanders, which they occupied between the 14th and 15th centuries! But history also tells us that it was really in Burgundy that the recipe became a resounding success..
Originally, boeuf bourguignon was a peasant way of preparing less noble cuts of meat, simmering them over a low heat in red wine, topped with aromatic herbs, onions, lardons, mushrooms and carrots, and other small variations depending on the recipe.
Here, our artisan-breeder uses only the finest ingredients from the farm or from the Côte d'Or for his 100% Côte d'Or bourguignon. Simmered over a low heat and served with potatoes, pasta or rice, for example, you're in for a real treat this Christmas!
Artisans: Abbaye de Flavigny, Les Anis de Flavigny®, a family-run, artisanal business.
Here's a little candy with an extremely long history that's not to be missed when discovering the gastronomy of the Côte d'Or.
It is thought that it was perhaps as early as 812, when Charlemagne ordered that aniseed be grown in convents and monasteries, that the monks may have had the idea of creating this sweet..
A bonbon bourguignon made with just 3 ingredients, rigorously selected by our artisan, who has continued this centuries-old culinary tradition: green anise seed (Pimpinella Anisum), beet sugar and natural flavoring. The aniseed is patiently wrapped in a thin layer of sugar for two weeks..
Let it melt in your mouth without crunching it (you'd break your teeth!) to gently release its aniseed aromas: it's delicious.
Artisan Biscuitier: Maison Toussaint, artisanal manufacturer of gingerbread specialties, cookies and meringues.
Pascal Toussaint built his reputation as a local baker before making a name for himself in 2008, when he won the gold medal for his gingerbread awarded by the Confrérie du Pain d'Épices de Dijon. And that's no small accolade, since gingerbread is perhaps, along with blackcurrants, mustard and wine, one of the key products for which Dijon's gastronomic reputation is built!
The exceptional mellowness of our artisan's creation sets it so apart from a classic gingerbread that he renames it the "Gâteau aux épices Toussaint", the house signature. Made with fragrant honey and a subtle blend of spices, of course, this spice cake is softer than a traditional gingerbread, and is a pure delight sliced plain or with a little jam, for example, or a slice of Christmas foie gras!
Artisan Chocolatier: Secrets Incomparables, Xavier Michel.
A former chef-patissier and sommelier in Michelin-starred establishments, Xavier Michel's passion for the product has led him to create truly exceptional chocolate spreads in Burgundy, crafted according to a unique artisanal know-how, without palm oil, and even without any vegetable oils or preservatives.
To elaborate his gourmet chocolate spreads, Xavier uses IGP PIÉMONT hazelnuts (over 40%...), this magnificent hazelnut with a worldwide reputation, which will benefit from 2 transformations to sublimate it: caramelization in a copper cauldron for an intense praline and the addition of a hazelnut Gianduja with real melted milk chocolate to give the spread a unique natural creaminess. Enhanced by a hint of Fleur de Sel de Guérande IGP, this is a real chocolate nugget for you to discover...
Once you've tasted it, you'll find it extremely hard not to finish the jar!
Artisan: Nectar de Bourgogne, Artisan fruit processor Emmanuelle Baillard .
We'd like to offer you one last classic to round off the tasting of our Côte d'Or Burgundy gourmet box: blackcurrant!
Burgundy blackcurrants take pride of place in this delicious coulis, which you can use to enhance your dairy products, fruit desserts and more. Because blackcurrant has a powerful taste, because it has character, because its aromas are complex, its color deep, because it is full-bodied and long on the palate, and above all because you can see all your childhood memories flash before your eyes when you taste it, don't hesitate to enjoy it: it's a little fruit bomb!
And did you know? In the past, blackcurrants were called "elixir of life", and today they are recognized as a "Superfruit" for their nutritional qualities and health benefits: with 200 mg of vitamin C per 100 g, blackcurrants are well ahead of kiwis (100 mg) and oranges (30 to 70 mg)!
Every month, we have our new gourmet boxes tested by independent testers (we don't pay them! We just send them one of our boxes), specialized in the world of gourmet boxes, to get external opinions (we'd obviously give them 10/10 every time...) and publicize our latest gourmet baskets, because we're proud of them, and we have to play the game of criticism...
The excellent results of our Ardennes gourmet box test on the Laboxdumois website: not bad!
